Three Healthy, Quick, & Easy Summer Breakfast Ideas

If you are like me, then you might have a really hard time coming up with healthy breakfast ideas! Let’s face it- coming up with just breakfast ideas is hard enough, let alone healthy breakfast ideas. With it being summertime, you might also be craving something light and healthy, and something that will get you energized for the day despite any summer heatwaves. Follow along below for some of my favorite healthy summer breakfast ideas! 

  1. Avocado Toast- This one has become a classic breakfast staple for most people over the last couple years. It started off as a trend, and soon enough most breakfast places ended up adding it to their menu! While it may seem trendy and over-hyped, I can assure you it is actually quite delicious if you have not tried it yet- especially if you love avocados. 

Recipe:

-In a small bowl, combine avocado, lemon juice, salt, and pepper. Gently mash with the back of a fork.

-Top toasted bread with mashed avocado mixture. Drizzle with olive oil and sprinkle over desired toppings.

Ingredients:

  • ½ small avocado
  •  ½ teaspoon fresh lemon juice
  •  ⅛ teaspoon Kosher salt
  •  ⅛ teaspoon freshly ground black pepper
  •  1 (1 oz.) slice whole grain bread, toasted
  •  ½ teaspoon extra-virgin olive oil
  •  Toppings: Maldon sea salt flakes, red pepper flakes
  1. Strawberry-Banana-Peanut Butter Smoothie- If you are looking for something quick that you can whip up and take with you on-the-go, this smoothie recipe is perfect! It is fast, and doesn’t involve a high number of ingredients. It is also packed with protein, so it will keep you filled up until lunchtime!

Ingredients:

  • 2 cups of frozen (or fresh!) strawberries & bananas, combined
  •  2 cups of Oat mile or Almond milk (skim milk works perfectly fine, too!)
  •  3 – 4 tablespoons of peanut butter
  •  1 cup water (if you’d like it colder, add in a ½ cup of ice)
  •  Sprinkle in some ground cinnamon (great for heart health)
  • ½ cup of flax seeds

Recipe:

-combine all ingredients in a blender, and blend! 

-top with cinnamon as preferred, and enjoy!

  1. Egg-Mushroom-Spinach Skillet: If you love eggs & veggies, this one is for you! It sounds fancy, but it is actually quite quick and easy, and packed with nutrients for you to start your day. 

Ingredients:

Recipe: 

  • -Slice the mushrooms and crush the garlic clove. Heat the olive oil in a large non-stick frying pan, then fry the garlic over a low heat for 1 min. Add the mushrooms and cook until soft. Then, add the spinach/kale. If the spinach/kale won’t all fit in the pan, add half and stir until wilted, then add the rest. Once all the kale is wilted, season.
  • -Now crack in the eggs and keep them cooking gently for 2-3 mins. Then, cover with the lid to for a further 2-3 mins or until the eggs are cooked to your liking.  

Hopefully, these three recipes give you some inspiration during your busy mornings, and that they make your life a little easier! It isn’t always easy to come up with ideas when it comes to meal prep, especially in the morning when we are typically in a rush to get out the door. It is easy to choose options that seem easier and faster, which leads us to ordering fast food or takeout. Just remember there are plenty of quick, easy, and healthy ideas out there that you can make right at home which will also save you money in the long run too. Bon Appetit!
